Chocolate Chip Cookie Fever

Everything is done and The Donald was very helpful thank you. Now, let's talk cookies. Ashlee is off at college, nose to the grindstone so cookies will be heading her way and to a few others as well. Pictures of said cookies that I posted started a chocolate chip facebook fever. Here's the recipe and they are friggin' awesome.





1 1/2 c. ap flour
1/2 t. baking soda
1/2 t. sea salt (this seems to make a difference)
1/2 c. (1 stick) cold unsalted butter, cubed
1/2 c. sugar
3/4 c. packed brown sugar
1 1/2 t. vanilla extract
1 large egg, lightly beaten
7 oz semi-sweet chocolate


Preheat oven to 350 (I used convection bake, I don't normally use it for baking, but was experimenting).
Sift flour, baking soda, and salt into a medium bowl and set aside.

Cream the butter and sugars in mixer on low speed until it is smooth and lump free.
Add egg and vanilla, mix on low just to incorporate. Add the dry ingredients again beat until just incorporated. Scrape down the sides of the bowl. Add the chocolate yet again until just incorporated. 



Refrigerate dough for two hours.

Line baking sheets with parchent, spoon the dough in golfball sized balls onto sheets. Bake 10-12 minutes, rotating sheets from middle to lower racks and spinning 180 degrees halfway through. The centers will look slightly under cooked and the edges crisp.



Cool cookies on rack then share and enjoy.
