Turkey and Brie Turnovers

I was watching Diners Drive-Ins and Dives the other night. It drives me insane that a. Guy Fieri has that job, driving around scarfing down awesome food and meeting really cool people and b. I end up with a mouth full of drool and a yen to whip up something sinful. This particular episode featured Turkey and Brie in Puff Pastry as well as Chicken and Waffles, both of which are feature this weekend at Chez Doele.



3 - 4 cups of roasted turkey, a blend of dark and white meat lends to a more flavorful filling, chopped
1 large shallot, thinly sliced
2 tbsp. butter
1/4 c. fresh Thyme
1/2 tsp. ground sage
salt & pepper
2 tbsp. flour
1/2 c. white wine
1/2 c. turkey stock
1 round of Brie
1 pkg. Puff Pastry
1 egg
(Cranberries)

Preheat oven to 425, convection if an option. Get the puff pastry out of the freezer to thaw. Heat a large skillet over medium heat, add butter and saute shallots until tender. If you and your family are okay with shallots and aren't picky twits like mine you can leave the shallots in, or if they are opposed to any types of onions, fish them out and save them for later.

Add the chopped turkey, thyme and sage and perhaps another tbsp of butter, they're your arteries, do as you see fit, please excuse the pun. Stir in the flour and continue to cook. Add wine, stock and let simmer until it's nice and thick and bubbly. Shut off the heat and allow to cool.

Roll out each sheet of puff pastry, cut each sheet into 6 squares, try for squares, rectangles will make you swear like hell. Trust me.

Slice the brie into 1/4" think slices and 2" lengths, you'll need enough for 12 turnovers.

Beat the egg and a bit of water for egg wash.

Put a scoop of turkey on one of the squares, top with brie, (this is where you can slide in some shallots for yourself, just remember which ones are which) brush the edges with egg wash, fold into a triangle (if you have rectangles, yelling SUCK IT!!! is therapeutic), crimp with a fork, transfer to a baking sheet and brush with egg wash.

Bake for 15 - 20 minutes until golden brown.

I simmered some cranberries in water with sugar until they were super think and used that to spread on top. Again, persnickety family abstained, pppphhttttpht!!!

WARNING: turns out, heating brie inside of puff pastry at 425 degrees for 20 minutes results in molten lava temperatures. Allow to cool or lose the roof of your mouth. After each bite, cause we're hogs and don't wait, we sat frantically waving our hands in front of our mouths and debating whether or not to spit the 800 degree cheese out, we soldiered on...
