Sweet Coleslaw Recipe

Recipe, just to mix things up a bit. . .

8 c. cabbage                                      1/4 c. milk
1 carrot                                              2/3 c. mayo
2 TBSP minced onion                         1/4 c. buttermilk
2/3 c. sugar                                         1 1/2 TBSP white wine vinegar
1/2 tsp. salt                                         2 1/2 TBSP lemon juice
1/8 tsp. pepper

Process cabbage and carrot in food processor using a fine shredding blade. Pour cabbage and carrot mix onto a clean dish towel, wrap up and ring out the liquid, skipping this step will cause a runny slaw and people will whisper behind your back or maybe even point at you and laugh, I'm not sure what kind of 'friends' you have. Pour cabbage and carrot into a large bowl. Again using the food processor, combine the remaining ingredients. This part is important, once they are combined, taste it. Too sweet? Add more vinegar or lemon, not sweet enough, add sugar. It's all about finding what YOU like. Once you are pleased with the sauce, pour over the cabbage and carrot mix and toss liberally. Refrigerate for at least 4 hours. EAT!

Recommended uses: A side for fried chicken and biscuits (Woo Hoo!), on, yes on sandwiches - such as grilled turkey and Swiss or even added to a Reuben. Works lovely on a pulled pork sandwich or a cheeseburger.
