Frito Pie

A take away from living north of Dallas. Our first introduction was seeing this on a daycare menu. Frito Pie? What the hell is that? We came to learn that in the school cafeterias the little angels were given a plate with an individual frito bag that was lovingly knifed open, back alley style, by the ladies in hairnets and topped with a scoop of chili, onion and cheese, "Now SCRAM brat!" No they never said that, well maybe. Here's the at home version:

1 bag of Fritos (medium sized traditional, don't get all scoopy)
Chili - canned with no beans works in a pinch but if you feel like making chili go ahead, just remember you are putting it atop Fritos so save the snobbery for later.
1 8oz. package of cream cheese
Shredded Cheese - name your poison
1 chopped onion (optional)

Preheat oven to 350. In a 9 x 13 baking pan, pour 3/4 of the Fritos, top with chili, onion, 3/4 of the cheese then remaining Fritos and cheese. Bake for 25 minutes or until everything is melted and gooey.

Toppings - jalapenos, sour cream, green onion. Now SCRAM brat!
