Pulled Pork

This is a nice weekend meal, it makes the house smell delightful, isn't very high in fat and the crock pot does most of the work.

3lbs. pork (you can use tenderloin to keep the fat low or an affordable cut)
1 TBSP canola oil
Salt & Pepper
1 onion chopped
1 cup barbecue sauce
1/4 c. brown sugar (optional)

Heat oil in a dutch oven over medium high heat. Brown pork on all sides in oil. Remove pork and cut into 1" pieces and add to crock pot along with onion and barbecue sauce. Cook on low setting for 8 hours. After cooking, put pork mixture food processor and pulse 5 times (this hides the onions from people who don't like onions - they'll never know, unless they are allergic, then everyone will know.) Taste the pork, if need be add more barbecue sauce or brown sugar. Serve on a Kaiser roll. I've added jalapenos or coleslaw right on top - heavenly!
