Potato Stackers?

I don't know what to call these dealios but let me put it this way... every time I eat a bite it's a When Harry Met Sally Moment. I'm serious, these are beyond good.

Two large golden potatoes. Or more, don't get hung up.
4 Garlic Cloves Smashed
4 Tbsp. Butter
Fresh Thyme
Salt

That's it.

Preheat the oven to 375. Get your large muffin tin - it's not a normal muffin tin size there are 6, not 12 in the pan. Get one.


In a saucepan melt 4 tablespoons of butter and 4 cloves of garlic - smash those puppies before you dump them in. Let that sizzle for a good 10 minutes, don't let it burn!! But let it get nice and golden brown. Peel your potatoes and slice them super thin - use a mandolin if you have one. They scare me, but you do you.

Pick off some thyme leaves, sprinkle them in the bottom of the muffin tin.

Toss the potatoes with the garlic butter. Salt them. Kosher salt, don't be stingy - potatoes need salt like women need kisses on the neck. Damn straight.

Now start with the smallest slices and lay them in the muffin tins, stack them up until you've filled each spot.

Bake for 30 - 45 minutes. Just keep an eye on them. They will get brown around the edges and smell wonderful.

When it's time to serve them flip them out of the muffin tin on to a plate (small slices end up on the top)
