Quinoa - It's a super grain, whatever the hell that means.

I don't remember what enlightened me about quinoa. It could have been a diet, the food network or facebook. I remember hearing it was a super grain and had buttloads of protein. When I first bought some - like 5 pounds because I jump in with both feet, I thought it looked like steel cut oats. I still wonder when I open the canister if it is steel cut oats, but it appears I don't have any of those in the house. Still, I stick my nose in them and mutter, "are these steel cut oats?"

Quinoa cooks like rice. Or at least that's how I cook my Quinoa. It's 'Kin-waaaaah' by the way and when you do say it, the Department of Agriculture mandates you use the phrase, "It's a super grain ya know!" Give it props my brothers and sistas.

Recently this has been my go-to recipe as I'm trying to eat healthier. The wine is still enjoyed each evening. Back off tea totlers!!

This recipe is going to have a cameo by salmon, because I love salmon. I love the color, the taste, the cripsiness, and the fact that it has provided me with 43 years of no visible wrinkles on my face. Sure I've throttled back on sun exposure for years now and use Murad (Dr. Murad send me $75 or a supply of everyday serum for that plug you ignorant dwarf genius) but Omega 3s are where it's at baby. I also consume mass quantities of olive oil. I would bath in it if I could. I attribute the fact that I sing like an angel when I'm in the car alone to the coating of the pipes I do with olive oil. Good lord I've gotten way off track.

1/2 c. Quinoa
4 TBSP. Olive Oil
1/4 c. chopped red onion
1/2 of a bell pepper chopped, I pick the red or yellow because they are pretty. I'm shallow.
1/2 c. raisins (shut up)
1/3 c. chopped nuts
red pepper flakes, however much you like
salt & peppa
3/4 c. water

Heat a small saucepan over medium heat. Pour in Olive oil, then quinoa. Stir to coat. Toss in all other ingredients except water. Did you put the water in too? I've done that, no biggy. Cook ingredients for 4-5 minutes. Then add water. Reduce temp and cover for 10 minutes. Remove cover let water cook off. Server over shredded lettuce and if you want a shiny coat plop a seared filet of salmon on top. I cook that in a small nonstick pan with olive oil over high heat covered. Flip, cook some more - 4 minutes tops. Watch the oil aka your eyebrows and bangs if you have a gas cook top.

This makes a lot, but it's a super grain and it's better than going after oreos later.
