Reuben Egg Rolls


Ironically I saw these on the show Best Thing I Ever Ate, indeed it was.

1 pkg. Egg Roll Wrappers
1/2 lbs. Corned Beef, thinly sliced then diced
1/2 lbs. Swiss Cheese, thinly sliced then diced
1/2 lbs. Sauerkraut
1 tsp. Caraway Seeds
1 Egg
1 1/2 c. Peanut Oil

1,000 Dressing (knock yourself out and make your own or pick up a bottle)

In a large bowl combine the corned beef, Swiss cheese, sauerkraut and caraway seeds. Beat the egg with a little water to use as an egg wash. Brush the edges of the wrappers with the egg wash, pile the filling in the center and roll up. Heat the oil in a wok or saucepan to 375, fry egg rolls until golden brown, turning once.

Serve with 1,000 dressing for dipping! Yields 14 egg rolls.
